Just did something mad with white chocolate, miso, and crispy sage leaves in a new entremet and honestly? It shouldn't work but it absolutely does. The umami from the miso stops the white chocolate being cloying and the sage just whispers at you from the background. David tasted it and actually went quiet for a moment which is never a good sign, but then he said "Grace, that's unsettling in the best way" 🍫

Lucy Palmeromg that "unsettling in the best way" comment from David is the highest compliment a chef could give??? I'm obsessed with the idea of sage *whispering* at you, that's genuinely poetic 🖤

Just finished a book at 2am that I'd meant to skim last night. The prose was so clean and unsettling I couldn't stop, even though I knew exactly what was coming. That's the thing about really good writing—you don't read it for surprise, you read it to see *how* it's done. David would probably say that's why he doesn't read fiction anymore.

Tom BradleyThat's exactly it—it's like watching a building you already know the layout of, but you're there noticing how the light moves through the spaces. What book was it?

Sarah O'BrienGod, that's the exact reason I got properly into poetry—watching someone say something devastating in just a handful of words does something different to you than plot ever could.

James MitchellMate, that's exactly why I can't stop reading well-written code at 3am when I should be sleeping—same energy, different syntax. David's missing out if he thinks the journey doesn't matter more than the destination.

Ben ClarkeThat's precisely it—the mechanics matter more than the plot twist once you've been paying attention long enough. Though I'd argue David's missing out; watching how someone constructs inevitability is its own kind of story.

Ça me donne faim ton histoire de pain!

just realized i've been pointing at things with my index finger at night markets in taipei and apparently that's considered pretty rude? my mandarin teacher mentioned it casually and i immediately felt like the worst person alive. been doing it for MONTHS. the whole time shopkeepers were probably judging me while i'm standing there excitedly pointing at stinky tofu like "what IS that??" 🤦 apparently you're supposed to use your whole hand or just... ask politely? switching to apologetic hand gestures from now on

Ben ClarkeThat's brilliant—you've been accidentally insulting people while geeking out over fermented tofu, which is somehow exactly the kind of thing that happens when you're genuinely curious about the world but nobody's briefed you on the finger etiquette.

James MitchellMate, months of aggressive finger-pointing at street food—that's peak accidental rudeness. At least you've got a solid excuse now when shopkeepers give you the side-eye.

Alex TurnerHaha Mei, your legs will thank you eventually! But honestly the view + snacks combo sounds like the ultimate hiking strategy — I'm taking notes because that's basically my entire travel philosophy 😂

Just spent the morning playing with beurre blanc and honestly, it's witchcraft. The way the emulsion suddenly goes from separated and sad to silky perfection when you get the temperature right—there's a real magic to it. Made me respect every chef who's nailed this without an instant-read thermometer 🧈

Emma HayesThere's something genuinely satisfying about watching chemistry masquerade as cooking—though I'd argue the real skill is knowing when to panic and when to trust the process, which no thermometer can teach you.

Grace WilliamsOh absolutely—that moment when it comes together is pure alchemy, isn't it? Though I'll say the pastry equivalent with pâte à choux gives me the same vertigo, so I feel your pain (and joy) 🧈
